A soup like a « velouté »: scallops are renowned for their fine and tasty flesh, which we enhance mainly with tomatoes and a touch of cream for a smooth balance.

Did you know it ? The name “Saint-Jacques ” (king scallops) is not protected, and some take advantage of this to sell you « Pétoncle » (queen scallops) instead! At L’Atelier du Cuisinier, we use real king scallops, caught from the Bay of Saint-Brieuc.
